Gravy made easy! When the turkey is cooked, wrap it in tin foil and leave it to rest for at least half an hour. Drain all but 2 tablespoons of the juices from the roasting pan and place over heat. Add 2 tablespoons of flour, stir in and cook for a few mins. At this stage you could add flavouring like wocestershire sauce with stock or water if you have no stock. Cook until gravy thickens and strain into a small saucepan. Then just before you serve, reheat.

Christmas Roast Potatoes


Making time for yourself on Christmas day!!!

If you have a little time to spare these evenings, you can get the roast potatoes out of the way for Christmas dinner. Just peel and and cut them in three, try and have them equal size, and then boil them until they are almost cooked. Remove from heat and empty water.When cool enough to handle, dip each potatoe in melted butter, oil or goose fat. Place on a tray each potatoe seperate and freeze. remove from freezer Christmas Eve and when the turkey is cooked take it out, increase the heat and cook the potatoes for 30 min

The most important thing to remember for perfect potatoes is not to roast them too long in advance as they lose their crunch if you keep them waiting. Start by par-boiling the peeled potatoes for approx. 5-6 minutes, depending on size. Drain well and set aside. 

Set oven to Gas Mark 6, 200°C (400°F). Heat some oil or fat from the turkey on the baking tray. Place the potatoes on the hot tray. Sprinkle with salt and roast for 40-50 minutes. 

Shallots, roasted with the potatoes, are also delicious.

Everyone worries about making sure the turkey is cooked so take the mystery out of it today and invest in a pop up thermometer from Boscos

pop-up poultry thermometers (10 pack)ensure your poultry is cooked properly – insert the puoltry thermometer into the thickest part of the turkey or chicken( between the leg and breast), the button will pop when the poultry is cooked to 85C

Allow 15min to the Lb and 15 min extra. Remember it is a good idea to “rest the bird” for at least one hour before carving to allow the juices to redistribute through the turkey.
